Crostini 3 Ways

Crostini are truly the perfect blank canvas, so let your culinary imagination run wild! Here are three Crostini recipes worthy of a fabulous gathering or a simple party of one.

Caramelized Onion & Herb Cream Cheese Crostini

Ingredients

  • 1 Cup Caramelized Onions
  • 6oz Herb Cream Cheese, I used Philadelphia Onion & Chive
  • 1/2 baguette, sliced 1/2″ thick, toasted

Directions:

  1. Preheat the oven to 350 degrees . Arrange the baguette slices on a baking sheet. Bake until golden, 10 to 12 minutes. Let cool slightly.
  2. Smear about 1 Tbs. of herb cream cheese on each of the toast slices.
  3. Top each slice with a pile of caramelized onions.

Cherry & Plum Crostini

Ingredients

Adapted from this recipe.

  • 2 Red Plums, thinly sliced
  • 1 cup Cherries, pitted, halved
  • 2 Tbs. sugar divided
  • 1/2 tsp. pure vanilla extract
  • 1 cup whole milk ricotta
  • 1/2 baguette, sliced 1/2″ thick, toasted

Directions:

  1. Preheat the oven to 350 degrees. Arrange the baguette slices on a baking sheet. Bake until golden, 10 to 12 minutes. Let cool slightly.
  2. Combine plums, cherries and 1 Tbs sugar in a medium bowl. Add 1/2 tsp. vanilla and toss to combine. Let macerate for 10 minutes.
  3. Whisk together ricotta and 1 Tbs. sugar until smooth.
  4. Spread with ricotta mixture and top with fruit.

Nutella & Maldon Salt Crostini

Ingredients:

  • Nutella
  • Maldon Salt, or any flakey sea salt
  • Baguette, sliced 1/2″ thick, toasted

Directions:

  1. Preheat the oven to 350 degrees . Bake until golden, 10 to 12 minutes. Let cool slightly.
  2. Spread with Nutella.
  3. Sprinkle with salt.

WARNING: If you dunk this crostini in a hot cup of coffee it instantly becomes HIGHLY ADDICTIVE.
