Sweet Potato Fries W/ Cilantro Lime Mayo

sweet potato fries with a gallon of cilantro lime mayo.


You see that up there? That makes my world a happier place… creamy, limey, cilantro-y joy in a ramekin.

You seen that down there? That’s dinner.


Its understood around these parts, but I suppose I should warn you…I do NOT share my fries.

3 sweet potatoes (about 1 1/2 lbs), peeled, each cut into thin sticks

2 T olive oil

Kosher salt, freshly ground pepper and garlic powder (to taste)

1 tablespoon chopped fresh cilantro


1/2 cup light mayo

1/2 teaspoon lime zest

1 1/2 tablespoons of lime juice

1 tablespoon cilantro


Preheat oven to 450. Toss sweet potatoes and oil on a foil lined baking sheet. Season with salt, pepper and garlic powder.

Roast, turning once, until golden brown and crisp, 20-25 min (if your fries are on the thicker side bake time will increase, 25-30min).

Meanwhile, whisk mayo, lime zest, lime juice and cilantro together in a small bowl.

Season fries with salt and top with cilantro and serve with cilantro lime mayo.
