Howdy and welcome to, Friday! Seriously, what’s better than the first few moments of the weekend? Today I made cookies, cuz nothing can add to the awesomeness of a day better than freshly baked cookies, amiright?
These Flourless Peanut Butter Cookies are ridiculously good and even more ridiculously quick and easy to make.
FACT: It’s fully possible to have a batch made and in the oven over the commercial break of your favorite show (aka: Parenthood).
Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven. Then, in a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined.
Roll 1″ balls of the mixture and place 1 inch apart onto parchment lined baking sheets.
Flatten the balls with a fork, making a crosshatch pattern on the cookies.
TIP: To prevent the fork from sticking in your cookie dough, wet your fork with a little water between each cookie.
Sprinkle coarse salt on top of the cookies.
Bake for 10 minutes, or until golden around the edges.
INGREDIENTS
1 cup peanut butter
1 cup sugar
1 teaspoon pure vanilla extract
1 large egg, lightly beaten
Coarse sea salt, for sprinkling
DIRECTIONS

In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.
