Let’s start off the week with a super fist-pumpy breakfast, shall we? Oh, and its like 5 ingredients and vegan (but you’d never guess).

If you’re only familiar with the savory side of this super food, you’re missing out. I’ve been favoring the sweeter side quinoa for a while now, this recipe is one of my favorites. Here’s how it’s done!
2 cups coconut milk
1 cup quinoa, rinsed
1 cup blackberries
1/2 cup shredded unsweetened coconut
1/2 cup chopped pecans
Bring milk to a boil in a small saucepan. Add quinoa, and return to a boil. Reduce heat to low, and simmer, covered, until three-quarters of the milk has been absorbed, about 20 minutes. Stir in blackberries, coconut and pecans. Serve with additional milk and agave to sweeten.
